I not too long ago received a bit of inspiration from my mates at Pacific Coast Producers to make a lightweight, no-added sugar, California-themed Bellini made with unsweetened canned peaches from California. But I really like utilizing frozen peaches or contemporary peaches when they’re in season. It’s a digital snap to place this collectively made with the goodness of peaches, that are simply so naturally candy and good! You could make this recipe fully Californian by swapping out the Prosecco for a pleasant, crisp California glowing white wine.

Enjoying Prosecco with Peter in Venice a decade in the past.

I first had a Bellini within the famed place it originated: Venice, Italy at Harry’s Bar. It is made with Prosecco (glowing Italian white wine) and pureed white peaches. Description

Sip into summer season with this refreshing California Peach Bellini recipe! Made with ripe peaches and glowing wine, it’s the proper simple cocktail for brunch or heat evenings.


  • 2 cups peeled, chilled, sliced peaches (about 2 giant peaches; might use frozen or canned, see beneath*)
  • 1 (750-ml) bottle Prosecco or California glowing white wine, chilled
  • 6 contemporary mint leaves


Instructions

  1. Place the peaches in a blender container and course of till clean to make a peach puree.
  2. Place 2 tablespoons peach puree within the backside of a champagne glass.
  3. Slowly fill glass with glowing wine (3-4 ounces), permitting for bubbles to dissipate.
  4. Garnish with a mint leaf.  Makes 6 servings.

Notes

May use contemporary ripe peeled peaches. Two giant peaches present about 2 cups sliced peaches. You might also use frozen sliced peaches, or chilled canned sliced peaches, draining liquid earlier than mixing.
